Hearty cowboy soup delivers a rustic culinary journey through western-style comfort. Ranch hands and home cooks alike savor this robust, flavor-packed one-pot meal that fills hungry bellies with pure satisfaction.

Ingredients

Scale

Meats:

  • 2 lbs ground beef

Vegetables and Legumes:

  • 1 medium yellow onion, diced
  • 3 celery stalks, diced
  • 1 lb (4 medium) Yukon gold potatoes, cut into 1-inch pieces
  • 4 carrots, peeled and sliced
  • 4 garlic cloves, minced
  • 1 (14.5 oz / 411 g) can green beans, drained
  • 1 (15 oz / 425 g) can black-eyed peas, drained and rinsed
  • 1 (15 oz / 425 g) can corn, drained

Liquids and Seasonings:

  • 2 tablespoons olive oil
  • 1 (14.5 oz / 411 g) can diced tomatoes with juices
  • 3 tablespoons tomato paste
  • 4 to 6 cups (946 to 1420 ml) beef broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon smoked paprika
  • 2 teaspoons chili powder
  • Salt, pepper, and red pepper flakes to taste

Instructions

  1. Warm olive oil in a large pot over medium-high heat. Sauté diced onions and celery for 2-3 minutes until softened. Add minced garlic and cook for an additional minute, ensuring it doesn’t burn.
  2. Introduce ground beef to the pot, crumbling with a spoon. Cook for 5-7 minutes until meat is completely browned and no pink remains.
  3. Pour in beef broth, then incorporate potatoes, carrots, green beans, tomato paste, diced tomatoes, black-eyed peas, and corn. Season with Italian seasoning, smoked paprika, and chili powder. Stir thoroughly to combine ingredients.
  4. Elevate heat to high, bringing the mixture to a rolling boil. Immediately reduce to medium-low, cover, and simmer for 14-16 minutes. Test potato tenderness with a fork.
  5. Adjust seasoning with salt, pepper, or red pepper flakes as desired. Serve piping hot in deep bowls.
  6. Optional: Garnish with shredded cheese, a dollop of sour cream, or fresh herbs for additional flavor complexity.

Notes

  • Customize the heat by adjusting chili powder and red pepper flakes for spice lovers or those preferring milder flavors.
  • Substitute ground beef with ground turkey or plant-based crumbles for a leaner or vegetarian version of the soup.
  • Enhance nutrition by adding extra vegetables like zucchini or spinach during the last few minutes of cooking for added vitamins and texture.
  • Prep ingredients beforehand to streamline cooking process and reduce overall meal preparation time.
