Description

Indulgent Tuscan salmon brings Mediterranean flavors dancing across your plate with rich, velvety sauce and tender fish. Fresh herbs and parmesan cheese elevate this elegant dish, promising a restaurant-quality meal you can savor at home.

Ingredients

Scale

Main Protein:

  • 4 salmon fillets

Herbs and Spices:

  • 1 teaspoon dried basil
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and pepper

Vegetables and Additional Ingredients:

  • 4 cloves garlic
  • 1/2 cup sundried tomatoes, chopped
  • 2 cups spinach (or as needed)
  • 2 tablespoons (30 ml) butter
  • 1/2 cup (120 ml) chicken stock
  • 150 ml (5 fluid ounces) half and half (or heavy cream)
  • 2 tablespoons (30 ml) oil

Instructions

  1. Thoroughly dry salmon fillets with a kitchen towel, then generously season with salt and pepper to ensure a perfect golden exterior.
  2. Heat oil in a skillet over medium-high heat until shimmering. Carefully place salmon skin-side down and cook undisturbed for 4 minutes. Flip and cook an additional 4 minutes until both sides are crispy and golden. Transfer salmon to a separate plate.
  3. Reduce skillet heat to medium and melt butter. Add minced garlic and sundried tomatoes, stirring for 1-2 minutes until aromatic and fragrant.
  4. Pour chicken stock into the skillet, simmering for one minute while scraping browned bits from the bottom. Gradually incorporate cream, reducing heat to create a gentle boil. Sprinkle in cayenne and dried basil.
  5. Add spinach to the sauce, allowing it to wilt quickly. Taste and adjust seasoning with salt and pepper. Modify sauce consistency by adding cornstarch slurry if too thin or chicken stock if too thick.
  6. Return salmon to the skillet, submerging fillets in the creamy sauce. Simmer together for approximately one minute to meld flavors. Plate immediately, generously drizzling additional sauce over each salmon portion.

Notes

  • Pat salmon fillets completely dry to ensure a crispy, golden exterior that locks in moisture and enhances flavor.
  • Use medium-high heat when searing salmon to create a beautiful crust without overcooking the delicate fish.
  • Customize the spice level by adjusting cayenne pepper, making the dish mild or hot according to personal preference.
  • Transform this recipe into a low-carb or keto-friendly meal by using heavy cream and avoiding any starchy thickeners.
